- 2 lbs (900g) beef chuck, cut into 1-inch cubes
- 3 tbsp olive oil
- 4 cups beef broth
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt & freshly ground black pepper, to taste
- Optional: 1 cup frozen peas

- Sear the Beef:
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches and brown it on all sides to seal in the flavor. Transfer to a plate and set aside. - Sauté the Base:
In the same pot, add chopped onion and minced garlic. Cook for 2–3 minutes until the onion becomes translucent and fragrant. - Add Tomato Paste:
Stir in the tomato paste and let it cook for about a minute to bring out its depth. - Build the Stew:
Return the beef to the pot. Add beef broth, potatoes, carrots, thyme, rosemary, salt, and pepper. Stir well and bring to a gentle boil. - Simmer Slowly:
