Meat:
- 1 lb ground beef
- 1 lb ground chuck
Aromatics & Spice:
- 1 tbsp extra virgin olive oil
- 1 yellow onion, chopped
- 1 white onion, chopped
- 1 jalapeño, diced
- 1 can diced tomatoes (14.5 oz)
- 1 can diced tomatoes with green chiles (e.g., Rotel)
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
- A few dashes of hot pepper sauce (like Tabasco)
Optional:
- 1 can pinto beans (undrained)
- Toppings: shredded cheddar, diced onions, sour cream, fresh cilantro, Fritos
Instructions
- Brown the Meat
In a large skillet, cook the ground beef and chuck over medium-high heat until fully browned (5–7 minutes). Stir frequently to break the meat into crumbles. Set aside. - Sauté the Aromatics
In a large stockpot, heat olive oil over medium-high heat. Add both onions and the diced jalapeño. Sauté until soft and fragrant (3–5 minutes). - Combine and Simmer
Return the browned meat to the pot. Add tomatoes (both kinds), hot sauce, and all spices. Stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 3 hours. - Add Beans (Optional)
If using beans, stir in the undrained pinto beans after the 3-hour simmer. Let the chili cook for 1 more hour on low. - Finish and Serve
Taste and adjust seasoning. Serve hot with your favorite toppings.
