Using a mix of ground beef and ground chuck, seasoned aromatics, and a rich blend of tomatoes and spices, this chili is a guaranteed crowd-pleaser.
Ingredients:
- 1 lb ground beef
- 1 lb ground chuck
- 1 tbsp extra virgin olive oil
- 1 medium yellow onion, chopped
- 1 medium white onion, chopped
- 1 jalapeño, diced
- 1 can diced tomatoes
- 1 can diced tomatoes with green chiles (e.g., Rotel)
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
- A few dashes of hot pepper sauce (to taste)
- 1 can pinto beans (optional, undrained)
Optional toppings:
Shredded cheese, sour cream, diced onions, chopped cilantro, Fritos.
Instructions:
1. Brown the Meat:
In a large skillet over medium-high heat, cook the ground beef and ground chuck. Use a wooden spoon to break it up evenly. If needed, cook in batches to avoid overcrowding. Brown the meat for 5–7 minutes, then set it aside.
2. Sauté the Aromatics:
In a large stockpot, heat olive oil. Add both chopped onions and the jalapeño. Sauté for 3–5 minutes until soft and aromatic.
3. Combine and Simmer:
Return the browned meat to the pot. Stir in diced tomatoes, tomatoes with chiles, chili powder, cumin, garlic powder, salt, pepper, and hot sauce. Bring everything to a boil.
4. Slow Simmer:
Reduce heat to low. Cover and let the chili simmer gently for 3 hours. This is where the magic happens.
5. Add Beans (Optional):
After 3 hours, add the pinto beans if desired. Simmer uncovered on low for another hour.
6. Taste and Serve:
Adjust seasoning if needed. Serve hot with your choice of toppings. This chili is bold, hearty, and unforgettable—just like its namesake.
