Cajun Corn On The Cob – Flavor-Packed and Oven-Roasted

Ingredients

  • 4 ears of corn, husked
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 tbsp mayonnaise (vegan mayo works fine)
  • ⅓ cup sour cream or Mexican crema
  • 1½ tsp Cajun seasoning
  • 1½ tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp chopped cilantro
  • ½ cup crumbled feta or cotija cheese
  • 1 tbsp lime juice
  • 1 tsp chipotle or chili powder (optional)

Instructions

1. Preheat and Prep the Corn:
Preheat your oven to 425°F (220°C). In a small bowl, whisk together the olive oil, half of the Cajun seasoning, half of the smoked paprika, onion powder, garlic powder, salt, and pepper. Place each corn cob on a sheet of foil and brush generously with the seasoned oil mixture. Wrap each cob tightly in foil.

2. Bake the Corn:
Place the wrapped corn on a baking sheet and roast for 30 minutes. For softer corn, remove from the oven, brush with more of the oil mixture, and return to bake for an additional 20–25 minutes.

3. Make the Creamy Sauce:
While the corn bakes, prepare the sauce. In a medium bowl, combine the mayo, sour cream, remaining Cajun and paprika seasonings, lime juice, salt, and pepper. Mix well and adjust seasoning to taste.

4. Finish and Serve:
Once the corn is done, carefully unwrap and allow to cool slightly. Brush with the remaining oil mixture (optional), then coat each cob with the creamy mayo sauce. For a grilled finish without a barbecue, sear the corn on a lightly greased grill pan over medium-high heat until slightly charred.

5. Garnish:
Top with crumbled feta or cotija, a sprinkle of Cajun spice, and freshly chopped cilantro. Serve immediately while warm.
