Warm, hearty, and full of flavor — this classic beef stew is the ultimate comfort food for chilly days. Packed with tender beef, hearty vegetables, and a savory broth, it’s a one-pot meal your whole family will love.


🛒 Ingredients:

  • 2 lbs (900g) beef chuck, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & freshly ground black pepper, to taste
  • Optional: 1 cup frozen peas

👩‍🍳 Instructions:

  1. Sear the Beef:
    Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches and brown it on all sides to seal in the flavor. Transfer to a plate and set aside.
  2. Sauté the Base:
    In the same pot, add chopped onion and minced garlic. Cook for 2–3 minutes until the onion becomes translucent and fragrant.
  3. Add Tomato Paste:
    Stir in the tomato paste and let it cook for about a minute to bring out its depth.
  4. Build the Stew:
    Return the beef to the pot. Add beef broth, potatoes, carrots, thyme, rosemary, salt, and pepper. Stir well and bring to a gentle boil.
  5. Simmer Slowly:
    Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, stirring occasionally, until the beef is fork-tender and the vegetables are fully cooked.
  6. Final Touch:
    If you’re adding peas, stir them in during the last 10 minutes of cooking.
  7. Serve & Enjoy:
    Taste and adjust the seasoning as needed. Serve hot with crusty bread, mashed potatoes, or even over steamed rice.
