Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 oz taco seasoning (1 packet)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- ½ cup salsa
- 8 flour tortillas (8-inch size)
- 3 cups shredded Mexican cheese blend
- ¼ cup chopped cilantro (optional)
Instructions
- Preheat Oven: Set oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Cook Beef Mixture: In a large skillet over medium heat, cook the ground beef and onion until browned (about 5-7 minutes). Drain any excess fat. Add garlic and sauté for 1-2 minutes until fragrant. Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa. Simmer for 5 minutes.
- Assemble the Lasagna: Layer 2 tortillas in the bottom of the dish, overlapping slightly. Spread a portion of the beef mixture on top, then sprinkle with 1 cup of cheese. Repeat the layers twice more. Top with a final layer of tortillas and the remaining cheese.
- Bake: Cover with foil and bake for 25 minutes. Uncover and bake for another 10-15 minutes until the cheese is melted and golden.
- Cool & Serve: Let it rest for 10 minutes before slicing. Garnish with fresh cilantro and serve warm.
Pro Tips
- Want extra heat? Use pepper jack cheese.
- Prefer a firmer bite? Swap flour tortillas for corn.
- Save time: prep a day in advance and refrigerate. Just add 5-10 minutes to the baking time when ready.
