Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • ½ cup salsa
  • 8 flour tortillas (8-inch size)
  • 3 cups shredded Mexican cheese blend
  • ¼ cup chopped cilantro (optional)

Instructions

  1. Preheat Oven: Set oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook Beef Mixture: In a large skillet over medium heat, cook the ground beef and onion until browned (about 5-7 minutes). Drain any excess fat. Add garlic and sauté for 1-2 minutes until fragrant. Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa. Simmer for 5 minutes.
  3. Assemble the Lasagna: Layer 2 tortillas in the bottom of the dish, overlapping slightly. Spread a portion of the beef mixture on top, then sprinkle with 1 cup of cheese. Repeat the layers twice more. Top with a final layer of tortillas and the remaining cheese.
  4. Bake: Cover with foil and bake for 25 minutes. Uncover and bake for another 10-15 minutes until the cheese is melted and golden.
